The distillation process follows the batch steam bain-marie method, a technique that ensures precise control and preserves the aromatic characteristics of the raw ingredient. Before being distilled, the sour cherries are separated from the wine and stored in special oxygen-free containers. This precaution helps preserve the finesse of their aromas, a fundamental step in obtaining a high-quality product. At the distillery, heating takes place gradually, avoiding any scorching of the vessel walls. This process allows the steam to slowly become enriched with alcohol and aromas, giving the distillate its characteristic smoothness and intense fragrance. Brenta Sour Cherry Eau-de-vie stands out for its refined aromatic profile. In addition to the typical notes of sour cherries, it offers a delicate almond aroma, a unique touch that comes from the distillation of the skins and the pressing of the cherry stone. Winemaking Cooking the must in copper cauldrons for 10–12 hours, until it reaches a reduction of between 30% and 50% of its initial volume, followed by fermentation in oak and chestnut wooden barrels.
